Undhiyoo fast track
Ingredients :
Potato : 2
sweet potato : 1
purple yam : 1
snap beans : 1/2 cup
edammama/peas/vatana : 1/2 cup
baby brinjal (optional) : 5-7 nos
To grind :
half bunch cilantro
1-2 green chillies
1 inch ginger
2-3 garlic
3-4 tomatoes
1 table spoon jaggery/brown sugar
For filling the brinjals :
1 table sp. powdered peanuts+ 1 tsp besan +1 tsp coriander powder +1 tsp chilly powder ( as per taste)
1 tsp sesame
2 tsp ajwain
2 table spoons peanut oil or any oil of your choice
1 pinch asofoetida
chop and dice the veggies into cubes.
In a broad mouth pan, heat oil and put ajwain and mustard seeds. When the mustard seeds splutter, add asofoetida and
turmeric. delicately put the stuffed brinjals and throw in the veggies, add salt and after nicely mixing it, cook the veggies with lid closed and top of the lid,
leave some water so that the veggies with steam and cook evenly.
When the veggies are cooked, pour in the green gravy and mix it with the veggies. If you have not used baby brinjals, you may
mix the stuffing and then when the gravy starts boiling, adjust the taste and the water, switch off the stove.
your gujju delicacy is ready...have it with hot puffed up puri or phulkas, or even have it just on its own...trust me, you are going to lick your fingers too!
