Ingredients :
500 gms pumpkin
100 gms black eyes beans/lobhiya/karamani
3 -4 green chillies
Few curry leaves
1 tsp turmeric powder
2 tsp coconut oil
1 cup coconut milk
Salt to taste
Method:
Soak the black eyed beans for 1/2 hour & pressure cook it for 3-4 whistles.Cut the pumpkin in to cubes after washing & removing the skin of the pumpkin. Boil it along with slit green chillies, curry leaves, salt & turmeric. After pumpkin gets cooked, add the cooked black eyes beans. Let it simmer and get nicely mixed with pumpkin. Now add 1 cup of coconut milk. Don't allow it to boil. Switch off the gas and add raw coconut oil. Your delicious, super healthy and Vegan Olan is ready to be savoured. You can have it as a side dish with sambar or have it on its own with hot rice & papadum
