Tangy Tomato Rice

A sure hit for all those busy evenings when you dont have time for an elaborate dinner...my daughter Anjali's all time favourite!


Ingredients :


1 medium size onion finely chopped

1 medium size capsicum finely choppef

4 medium tomatoes

2 tablespoon sambar powder

2vtablespoon ghee / any oil of your chouce

1 teaspoon jeera

1 tablespoon chopped coriander

1 cup cooked basmati


Method :


Take a pan & put ghee in it. Let the jeera splutter and saute the onion until they become transcluscent. Now add the capsicum & saute it for 2 minutes. Add the sambar powder and saute it in medium flame. Dont allow the sambar powder to burn. Now add the diced tomatoes. Now saute it together with all ingredients. Add salt and Pour 1/2 cup water to cook the tomatoes nicely with the lid closed. Now add the cooked rice to the nicely cooked tomato paste. Mix the rice nicely and let it cook with the lid closed for 5 mins in low flame. Open the lid and add a tablespoon of ghee and garnish it with the the fresh coriander leaves. Your tangy tomato rice is ready. Enjoy it with cucumber tomato raita and your choice of chips.
