Ingredients :
veggies like ashgourd,indian ashgourd (dudhi), pumpkin, carrots, beans, yam, -all or some - 2 cups
well cooked mungdal (yellow) 1 cup
coconut dessicated/fresh - 2 tbsps
jeera - 1 tsp
red chilly - 1
coconut oil - 1 tsp
mustard seeds - 1/2 tsp
udad dal - 1 tsp
curry leaves - few
cook the veggies with enough water, salt and turmeric
when cooked, add the cooked mung dal to it.
now grind well the coconut, redchilly, jeera with 3 tbsp water
add the coconut mixture to the veggie dal mixture.
bring the curry to boil and then season it with mustard and udad dal in hot coconut oil.
A healthy lunch item...tastes so wholesome with piping hot rice and rasam.
Keerakootan
Molagutal with only spinach is calleed keerakootan. only small modification : dry roast 1 tsp udad dal to the coconut grinding
items, other procedure is the same.
